Kick ass! Better make sure it's secure this summer with all those hurricanes you have that destroy your backyard.

is it a gas smoker? If yes, well...I won't answer that one.

Otherwise, I would start by picking up a book or something with recipes, the one I recommend to everyone is this:

http://www.amazon.com/John-McLemores-22 ... 0578059541

Because it has a ton of awesome recipes and tells you exactly what to do. Everything depends on what you want to smoke, so say you pick ribs you would then choose a wood that compliments it best, etc. A nice to have (must have, IMO) is a remote thermometer because smoking is mostly about internal temperatures. At a minimum have a thermometer you can stick in the meat to check.

And seriously, don't make it out to be harder than it is, because it isn't. The hard part is waiting for the delicious meat that awaits you.

I think I have the same Weber that MTK has. The Weber 18.5 inch smokey mountain cooker.

I have a gas smoker so I will defer to the guys that don't here but a thermometer for you seems essential as keeping a proper temperature will be a key.

I think a thermometer is essential with any kind of smoker. Those on the outside are not to be trusted. I just hang an old school oven thermometer on one of the racks in there. I am too cheap to buy one of the probe digital thermometers but want to eventually get one. With charcoal something like that might be more useful as you have to make more adjustments for air flow and what not.

During your sober time with it, what have you found essential to have with it?
