Breaking in the smoker (with pig candy)

i don't turn often and the sugar didn't seem to rub in very well. It all just kind of sat on top. That's why i just ended up putting it on top and not flipping the bacon at all.

So, if I were doing Pig Candy today, do I do it in the smoker or on the grill itself? If on the smoker, for how long?

It can be done on the grill but the mess (grease) isn't worth it and you really have to baby it. Do it in smoker and keep close eye on it. It can go from delicious to shit quickly. It will crisp up once it cools so stop before you think its perfect.

speaking od which i have ben worndering, hou appeear to live in an apartment now. how are you aboe to smoke shit out to readily? i live in a condo and i am worried about my neightbord.

Good question, I do live in an apartment and the way it's set up is I only have one real neighbor. They are damn near like townhouses, we each have our own garage and their porch is above my patio and it's not a closed area so most if not all of the smoke just goes another route. Not to mention, they are loud as fuck, so I consider it a thank you.

As a backup plan I can just smoke in front of the garage if I want to. Still though, fuck them.

I am not in Aurora anymore but yeah, if they can get Smokey out of there without me hearing and pummeling then they deserve it.
