We cover many hearty dishes here but every now and then we need something to satisfy the old sweet tooth. I couldn’t just choose any dessert, it had to have some kick and what better to add that than Guinness.
Ingredients
10 Egg Yolks
10 Egg Whites, Whisked
12oz Dark Chocolate
1 Stick Butter
7 tbsp Sugar
4oz Guinness Draught
Instructions
Melt dark chocolate and butter in a bain-marie, add in the Guinness Draught. Beat egg yolks and caster sugar until light and fluffy. Mix in the melted chocolate mixture in with egg yolks and slowly folding in the whisked egg whites until everything is smooth. Transfer mousse to serving glasses and chill.
Serve with fresh raspberries or other seasonal berries.


Aren’t raw eggs a bad idea?
.003% of eggs (or about 1 in 30,000) are contaminated with salmonella. Also helps if you buy eggs locally from an organic farm or from chickens that are cage-free. All depends on your comfort level I guess.
What if I just leave out the eggs. I bet it will still be a delicious drink.
