Chicken Diablo

I love dishes that are easy to make and bring the heat so to satisfy those two requirements it doesn’t get much easier than chicken diablo.  Everyone is going to have their own heat preference so feel free to scale the ingredients accordingly.

 

 

  • 4 Boneless, Skinless Chicken Breasts
  • 1/4 Cup Ketchup
  • 1/2 Cup Sour Cream
  • 2 Tablespoons Honey
  • 2 Tablespoons Vegetable or Peanut Oil
  • 1/4 Teaspoon Paprika
  • 1/4 Teaspoon Cumin
  • 1/4-1/2 Cup Hot Sauce

The hot sauce you choose will dictate the flavor of the dish so make sure you choose wisely.  If you want more of a buffalo flavor go that way, if you like more conventional hot pepper sauces that’s fine as well.

Mix all of the wet ingredients together while adding the cumin and paprika to taste.  You know what you like so now is the time to make adjustments.  Marinate the chicken in the mixture for a few hours, leaving aside half of the sauce to use for service.

Heat oil in large skillet and add marinated breasts until meat is cooked throughout.  The chicken can be served on a bed of rice, in a salad or even on a fresh roll as a sandwich.  Cover with remaining sauce and enjoy!
