Rotel Cheese Dip

This is about as simple as recipes come but I guarantee you will come close to finishing off an entire bowl by yourself (I speak from experience).  You can keep this dip mild and use just any ground sausage with the mild version of the tomatoes or experiment and kick the heat up with a spicier sausage (or the habanero  Rotel).

Ingredients

  • 3 (8 ounce) packages cream cheese
  • 2 (10 ounce) cans Rotel tomatoes & chilies
  • 1 lb sausage

Directions

Brown sausage in large frying pan, drain and return to pan.
Add 3 packages of cream cheese to the sausage.
Drain about half of the liquid off the Rotel tomatoes (actually pouring the Rotel into a strainer will drain off too much of the liquid, just drain with lid on can).
Add the Rotel tomatoes to the cream cheese and sausage and melt all ingredients together until well blended.

Can be served in a crock pot to stay hot.

    My recipe calls for velveeta instead of the cream cheese. More like nacho dip.
